PASSOVER MANDEL BREAD 
5 eggs
1 3/4 cup sugar
1 cup vegetable oil
1 cup walnuts, finely chopped
1 tablespoon vanilla or almond extract
3 cup cake meal
1 cup chocolate chips
cinnamon sugar

Beat eggs, sugar, oil, and pinch of salt. Add cake meal, nuts, chips, and extract. Shape into 2 long rolls and sprinkle with cinnamon sugar.

Bake on a greased and floured cookie sheet at 350°F for 20 minutes.

Cut into 1/2-inch slices while still warm, and stand on end or lay slices on their sides.

Bake for 15 - 20 more minutes; if slices are on their sides, turn once half-way through the baking to toast the other side.
