BUTTERMILK CAKE 
1 1/2 c. sugar
1/2 c. butter
3 eggs, separated
1 level tsp. baking soda dissolved in 1 c. buttermilk
2 squares chocolate
1/2 c. hot water
2 1/4 c. flour
1 tsp. vanilla
Pinch of salt

Cream together sugar and butter with the 3 egg yolks. Dissolve soda in the buttermilk; melt the chocolate in the 1/2 cup hot water. Sift and measure the flour. Add vanilla to mixture along with salt. Add melted chocolate and 3 beaten egg whites. Add flour and milk alternately and fold in beaten whites last. Bake 25 or 30 minutes in moderately oven. Makes 2 (10") layer or oblong pan. Use plain frosting or the kind you like, I use soft as silk, or all purpose flour.
