BROCCOLI-CHEESE STRUDEL | |
1/4 c. butter 1/2 pkg. filo dough, thawed and kept wrapped FILLING: 6 c. raw chopped broccoli 3 tbsp. butter 2 eggs, beaten 1 c. chopped onion 2 c. bread crumbs 2 c. grated Cheddar cheese 2-3 tbsp. lemon juice Salt and pepper Saute onion in 3 tablespoons butter until just soft. Add broccoli and saute until broccoli is tender but still bright green, approximately 5 minutes. Cool. Add other filling ingredients and season to taste. To assemble strudel: Brush first layer of filo with butter. Add 3 more layers, brushing after each. Put half of the broccoli mixture along one short side, leaving approximately 1 1/2 inches free at sides. Fold ends in and then gently roll strudel carefully (use spatula or a cookie sheet with no lip). Place strudel on buttered baking tray (with a lip). Repeat with second roll. Brush with butter and make diagonal slits on top of rolls. Bake at 375 degrees for 30 minutes until golden. |
