STRAWBERRY DUMPLINGS 
1/3 c. sugar
2/3 c. water
1/2 tsp. vanilla
1 c. plain flour, sifted
2 tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
4 tbsp. butter
1/2 c. milk
2 c. strawberries
1 tbsp. sugar

In saucepan, combine the 1/2 cup sugar and water. Bring mixture to boiling; reduce heat and simmer for 5 minutes. Stir in vanilla. Sift together flour, the 2 tablespoons sugar, baking power and salt. Cut in butter until mixture is crumbly. Stir in milk until well combined.

Place berries in 1 1/2 quart casserole; pour hot sugar mixture over berries. Drop dumplings by spoonful over berries. Sprinkle dumplings with remaining 1 tablespoon sugar. Bake in hot oven (450 degrees) for 25 to 30 minutes or until dumplings are done.
