FLAN 
1 3/4 c. sugar
3 egg whites
8 egg yolks
2 tall cans evaporated milk
2 tsp. vanilla
6 tbsp. brandy or rum

Put 1 cup of sugar into pan you will cook the flan in. Place it over the fire, stirring constantly until the sugar melts and turns golden. Tip the pan around until all of it is coated and put aside until it is cooled.

Beat egg whites and yolks together; add milk, remaining sugar, and vanilla; mix well. Strain into the coated pan; cover and place it in a larger pan containing hot water.

Put this in the oven at 350 degrees for 1 1/2 hours or until a knife inserted in the center comes out clean. Allow to cool a little, but turn out on a platter while still warm or caramel will not come loose from pan.

When ready to serve, pour brandy or rum over the flan and set aflame. Be sure to chill many hours before serving.
