1/2 cup (1 stick) butter
1/2 cup sugar
1 egg, beaten
1/2 tsp. vanilla
1/2 cup chunky peanut butter
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 apple, pared and grated

Cream butter and sugar; add lightly beaten egg and vanilla. Stir in peanut butter. Sift dry ingredients and add to mixture. Add grated apple. Form into balls and place on greased cookie sheet. Press flat with fork.

Bake in 375°F oven for 10 to 12 minutes.
