STOVE TOP MINIATURE MEATLOAF
WITH SAUCE
 
2 lb. ground chuck
1 tsp. salt
1/2 tsp. pepper
1 lg. onion (diced)
3/4 lg. bell pepper
1 can whole tomatoes
1 c. saltine cracker crumbs
1 egg (beaten)
1 tbsp. sugar
2 cans tomato sauce
1/2 c. ketchup
1 can tomato stew
Hot sauce

Mix ground chuck with diced onions and bell pepper. Add 1/2 can tomatoes (cut up) cracker crumbs, 1/2 can tomato sauce, egg, salt, pepper, sugar (to taste). Mix well. Form miniature (individual) oval loaves. Cook in frying pan on low heat until done. Pour in sauce and let simmer.

Sauce: Combine 1/2 can tomatoes and tomato stew, ketchup, hot sauce, 1 can tomato sauce, dash of sugar. Simmer over low heat. Serve with cabbage or oriental rice.
