SKILLET CORN 
1 c. thin green pepper slices
1/4 c. chopped onion
2 tbsp. butter
1 (17 oz.) can whole kernel corn, drained
1/4 c. diced pimento
1/4 tsp. salt
Dash of pepper to taste
Dash of cayenne pepper to taste
1 c. grated Cheddar cheese

Gently cook green pepper and onion in butter until tender. Mix in corn, pimento, salt, pepper, and cayenne. Heat thoroughly. Top with cheese and heat gently until it melts. Serves 6 people.
