CHEESECAKE
 
1 lb. cottage cheese
2 (8 oz.) pkgs. cream cheese
1 pt. sour cream
4 eggs
1 1/2 c. sugar
1/4 lb. sweet butter
2 tsp. lemon juice
1/3 c. cornstarch

Melt butter. In blender (processor better) put small amounts of sour cream, cottage cheese and butter. Blend until smooth. Add cream cheese; blend again. Continue process until all cheeses, sour cream and fat have been blended. Add eggs, one at a time while blending above ingredients.

Next blend in lemon juice, sugar and cornstarch. Blend whole mixture together until smooth. Spray spring form pan with Pam. Pour batter into pan and bake approximately 1 hour at 350 degrees or until lightly brown on top. Let cool 2 hours in oven. (Door must be at least partially open if electric oven.) Can serve with fruit if desired.
