SPINACH - APPLE SALAD 
1 lb. fresh spinach, trimmed & washed
3 sm. apples, chopped
1/4 c. toasted sunflower seeds
2/3 c. corn oil
1/4 c. wine vinegar
1 tbsp. soy sauce
1 tsp. dry mustard
1 tsp. sugar
1/2 tsp. salt
2 tsp. fresh lemon juice
2 dashes hot pepper sauce

In a pint jar shake all ingredients except spinach, apples and sunflower seeds. Toss spinach and apples with enough dressing to coat well and add sunflower seeds. Makes 5-6 servings. P.S. I add fresh mushrooms or water chestnuts.
