CHICKEN TETRAZZINI 
large hen
9 oz. pkg. spaghetti
1 lb. Cheddar cheese, grated
1 large can mushrooms and liquid
1 onion, finely chopped
1 green pepper, chopped

Cook hen in plenty of water. Let stand overnight, refrigerated. Cook the spaghetti in broth, then add the remaining ingredients. Make White Sauce.

White Sauce:

1/4 lb. butter
3/4 c. flour
1 qt. milk
salt and pepper

Chop chicken in bite-size pieces. Mix with spaghetti mixture and white sauce. Mix thoroughly. Pour into large casserole and top with some of the grated cheese.

Bake 40 minutes at 350°F.

Serves 8 to 10.
