OATMEAL MUFFINS 
1 c. oatmeal (old fashioned regular)
1 c. skim milk
1 c. whole wheat flour
1/2 tsp. baking soda
2 tsp. baking powder
2 tsp. vegetable oil
3/4 c. blueberries
1 tsp. cinnamon
1/2 c. dark brown sugar, packed
1/3 c. egg whites, slightly beaten
1/2 c. nuts (opt.)
1 tsp. vanilla

Preheat oven to 350 degrees. Soak oatmeal in milk for 30 minutes. Combine flour, baking powder, baking soda, brown sugar and spices. Add egg whites and oil to soaked oatmeal. Add dry ingredients, mixing lightly. Add blueberries, distribute batter evenly in a 12 cup muffin pan lightly sprayed with no stick spray. Bake 25 minutes or until toothpick inserted in center of muffins comes out clean.
