CORN CHEESE BAKE 
3 c. corn (canned or frozen)
2 beaten eggs
1 1/2 c. cheese (Swiss or brick or some of each)
2 (5 oz.) cans evaporated milk
1/4 c. chopped onion
1/4 - 1/2 tsp. salt
Dash of pepper
3/4 c. fresh bread crumbs
2 tbsp. butter, melted
1/2 c. chopped celery leaves

In a medium sized mixing bowl combine corn, eggs, celery, 1/2 of the cheese, milk, onion, salt and pepper. Put into a 9" baking dish, put dish on a cookie sheet and bake at 350 degrees for 20 minutes. Remove from oven and sprinkle over the top the remaining cheese, bread crumbs and butter. Also a little shredded cheddar cheese will add to flavor and color. Return to oven and bake 5 to 10 minutes more, or until golden brown. Yield: 8 to 10 servings.
