1 whole rabbit, cut up 1 big onion 2 cloves garlic Seasoning salt and pepper to taste 2-3 tbsp. flour A few tbsp. cooking oil for browning Wash rabbit meat and pat pieces dry. Chop garlic pieces and rub into meat. Sprinkle meat with a little salt and pepper or seasoning salt. Roll each piece in flour. Heat cooking oil and brown rabbit pieces lightly on all sides. Put browned pieces in Pyrex dish. Put sauteed onion around and on rabbit. You can cook rabbit in oven with lid on dish - add a little water, or in an open dish for more crispness (if so, baste with a little butter). You might wish to add a little wine when basting. Cooking time is about 1 1/2 hours. Test for doneness. Remove back pieces at about 3/4 of cooking time to prevent drying out. Set oven temperature at 350 degrees. |
