ELEGANT RHUBARB PIE 
1 1/2 c. sugar
1 egg, slightly beaten
1/4 tsp. salt
3 tbsp. flour
2 tbsp. melted butter
4 c. cut rhubarb
Pastry for 2-crust pie

Spread the 4 cups rhubarb in bottom of pastry-lined pie pan. Mix other ingredients together. Cover the egg mixture over the rhubarb. Wet edges and place top pastry over the rhubarb mixture. Bake 40 minutes in 425 degree oven.
