PINEAPPLE QUICK BREAD | |
1/2 c. canned crushed pineapple 1/3 c. nonfat dry milk 1 med. egg 1 oz. dry enriched cornmeal 2 tsp. flour Sweetener to equal 2 tsp. sugar 1 tsp. baking powder Oven at 350 degrees. Combine ingredients until just mixed not completely smooth. Spray non stick muffin pan (6) bake for 15 minutes (not any longer as they get dry). Test by using a toothpick which comes out dry. 1 serving - breakfast: 1 fruit, 1 milk, 1 egg, 1 bread. |
