SHRIMP BATTER FOR FRIED SHRIMP 
4 tablespoon flour
1/2 teaspoon salt
1 egg
2-4 tablespoons water

Stir together flour and salt. Beat egg lightly and add. Stir in water enough water to thin to a consistency of heavy cream. If batter is too thin, add more flour; if batter is too thick, add more water, a little at a time.

VARIATIONS:

1. In step 1, use 3 tablespoons flour and 1 tablespoon cornstarch; or 2-1/2 tablespoons flour and 1-1/2 tablespoons water-chestnut or corn flour.

2. In step 1, add any 1 or more of the following:

a. 1/2 teaspoon baking powder

b. 1 teaspoon sherry

c. 1 teaspoon sugar

d. 4 or 5 drops ginger juice

e. 1/2 teaspoon garlic powder

f. dash of white pepper

g. 1/2 teaspoon onion powder

h. 1/2 teaspoon paprika

3. In step 2, for the water, substitute beer, sour milk, buttermilk, sour cream or plain kefir, or carbonated water.
