EASIER LINZER TARTS 
1 c. butter
1/2 c. sugar
2 egg yolks
1 c. ground almonds
1/8 tsp. cinnamon
1/2 c. confectioners' sugar
1/2 c. raspberry jam
2 1/2 c. flour

Cream butter, sugar and yolks. Add almonds, flour and cinnamon. Cut dough with doughnut cutter; remove inside circle for bottom of cookies. (You will need equal numbers of tops and bottoms.) Bake at 350 degrees for 10 minutes.

To assemble: Spread bottom cookie with jam. Cover with top. Sprinkle with confectioners' sugar, then place teaspoon of jam in hole on top of cookie.
