ZUCCHINI WITH ONIONS & BACON 
6 strips bacon
1-2 onions (cut in rings)
1 lb. zucchini
1 1/2 c. water
1/2 tsp. salt
1 tsp. Bouquet Garni (see note)

Cook bacon until crisp. Drain and crumble. Boil onions, zucchini, salt and Bouquet Garni until tender; drain. Place in dish and sprinkle with crumbled bacon.

Note: Bouquet Garni - on a triple layer (4 inch square) of cheesecloth place celery leaves, parsley sprigs, 1/2 teaspoon rosemary in center, tie with string.
