HUMMINGBIRD CAKE 
Cake:

3 c. all-purpose flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1/2 tsp. vanilla
1 1/2 c. oil
2 c. mashed or chopped bananas
3 eggs, beaten
1 tsp. cinnamon
1 c. chopped nuts
8 oz. crushed pineapple

Combine dry ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, nuts and bananas. Spoon batter into 3 greased and floured 9 inch cake pans.

Bake at 350°F for 25 to 30 minutes until done. Cool completely. Spread frosting between layers and on top and sides of cake. Put nuts on top.

Frosting:

8 oz. cream cheese, softened
1/2 c. butter
16 oz. box powdered sugar
1 tsp. vanilla extract

Combine cream cheese and butter; cream until smooth. Add powdered sugar, beating until light and fluffy. Stir in vanilla.
