WELSH CAKES 
2 eggs
1 1/2 c. sugar
1/3 c. & 1 tbsp. yogurt, sour cream or buttermilk
1/2 tsp. salt
4 tbsp. baking powder
6 c. flour
3/4 lb. butter

Preheat oven to 350 degrees. Beat eggs with yogurt. Gradually beat in sugar, beating until thickened. Add butter and mix well. Add dry ingredients and mix thoroughly. Then you can

1. Roll out on well floured board about 1/4 to 3/8 inches thick. Cut into circles and bake on a cookie sheet 5 to 7 minutes, or

2. Roll out very thin, cut with cookie cutters, sprinkle with cinnamon sugar and bake 3-5 minutes, or

3. Roll out as in step 1 above. Cut into circles. Dab jam on one circle, top with another. Seal the edges by pressing with the tines of a fork. Poke top with fork. Bake 7-10 minutes.
