SACCHARIN PICKLES | |
Cucumbers 1 gallon vinegar 3/4 to scant c. pickling salt 1 tsp. saccharin powder or tablets Pickling spices Alum Thoroughly wash and dry cucumbers. Thoroughly was jars and sterilize. Be sure jars are dry. Put 1 teaspoon pickling spices to each quart jar and a pinch of alum, about 1/8 teaspoon. Pack jars with cucumbers. Pour off 1 cup vinegar, add the salt and saccharin to the gallon of vinegar less 1 cup. Shake and dissolve well. Can be made ahead of time. Pour vinegar over cucumbers in jars. Seal with hot lids. |
