CARROT BRAN MUFFINS 
1 1/2 c. bran
1 c. buttermilk
1 c. flour
1/4 c. brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 beaten eggs
3/4 c. shredded carrots
3 tbsp. oil
Raisins; optional

In bowl, combine bran and buttermilk. Let stand until liquid is absorbed. In mixing bowl, stir flour, sugar, salt, baking powder, and soda. Combine cereal- milk with egg, carrots, and oil. Add all at once to dry ingredients, stirring just until moistened. Batter will be thick. Fill greased muffin tins 2/3 full. Bake 20-25 minutes at 400 degrees.
