CHICKEN CHOW MEIN | |
3 tbsp. butter 2 tbsp. onion, minced 1/2 lb. lean pork 2 1/2 tbsp. cornstarch 2 1/2 c. chicken stock or stock substitute 1/4 tsp. salt 1/4 tsp. paprika 1 1/2 c. cooked chicken, diced 1 1/2 c. celery, diced (1/2 inch pieces) 3/4 c. mushrooms 1 c. bean sprouts 2 tbsp. soy sauce 3 cans chow mein noodles Cut the pork into cubes. Melt the butter in a skillet or heavy saucepan. Add cornstarch. When blended, stir in slowly the chicken stock or substitute. Add the salt, paprika, diced chicken, celery, bean sprouts, mushrooms and soy sauce. Simmer for 1/2 hour. Then, add 2 tablespoons soy sauce and other seasoning if needed. Serve over chow mein noodles or cooked rice. Serves 6. |
