ENCHILADA SAUCE 
3 tbsp. shortening
3 tbsp. flour
2 tbsp. chili powder
Dash of garlic powder
1 sm. can tomato sauce
1 c. water (for a thinner sauce, add another 1/2 cup)

Mix shortening and flour together in skillet; fry until brown. Add chili powder, garlic powder and mix well. Add tomato sauce and water and stir. Simmer for about 5 minutes. Use this sauce with the following Enchilada Filling.
