HONEY - WHOLE WHEAT BREAD
3 c. stone ground whole wheat flour
1/3 c. honey
1/4 c. shortening
1 tbsp. salt
2 pkgs. active dry yeast
2 1/4 c. very warm water (120 to 130 degrees)
3 to 4 c. all-purpose white flour

Mix wheat flour, honey, shortening, salt and yeast in bowl. Add water, beat until smooth. Stir in flour, 1 cup at a time to make dough easy to handle. Turn dough on lightly floured surface. Knead until smooth and elastic, about 10 minutes. Place in greased bowl, turn greased side up. Cover and let rise in warm place until double. Mold into loaves, place in greased loaf pans 8 1/2 x 4 1/2 inches. Brush loaves with butter, sprinkle with whole wheat flour or crushed oatmeal if desired. Let rise until double, about 50 minutes. Bake at 350 degrees 40 to 50 minutes. Cool on wire racks.
