DIABETIC CAKE 
1 1/2 c. self-rising flour
2 c. raisins
1 c. unsweetened fruit cocktail
1 c. unsweetened applesauce
2 eggs
3/4 c. oil
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 c. water
2 tsp. liquid sweetener
1 tsp. baking soda
1 tsp. vanilla

Cook the raisins until dry. Drain well. Drain fruit cocktail, then add applesauce, eggs, sweetener and oil.

Mix well. Add to rest of ingredients. Bake in round angle cake pan for 35 minutes in a 350°F oven.
