LEMON PERCH 
1/4 c. butter
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. dill weed
1 lb. perch fillets

Melt butter in skillet, stir in lemon juice and seasonings. Place fish in skillet, skin side down; cook 4-5 minutes over medium heat. turn; continue cooking until fish flakes easily with fork. Serve butter mixture over fish. Serves 4.

I just wanted to comment on how excellent this recipe is. I had some perch leftover in the freezer and was googleing recipes for perch and found this one, the second it talked about lemon I was sold. The recipe turned out to be better then I had first even hoped. One thing I did was I added 1/4 cup of cilantro to the mix, it added a very nice distinct extra flavor and really tied the dish together. thank you for this recipe, I hope to find some more good ones. *HIGHLY, HIGHLY SUGGEST*
