BAKED YELLOW SQUASH 
2 c. boiled yellow squash mashed
Add 1 tbsp. grated onion
2 eggs, whole
1 tbsp. chopped parsley

Add about 1/2 cup cream of milk, salt and pepper to taste; mix all ingredients together and add about 1/2 cup cracker crumbs. Put in buttered dish, sprinkle cracker crumbs on top, dot with butter. Bake at 350 degrees until well browned.
