APPLE CAKE WITH CREAM FROSTING 
CAKE:

2 eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. salt
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
4 c. diced apples
1 c. nuts

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese, softened
3 tbsp. butter
Pinch of salt
1/2 tsp. vanilla or maple extract
1 1/2 c. confectioners' sugar

FROSTING: Mix well until smooth.

CAKE: Beat eggs until light and fluffy; gradually add sugar, oil, and vanilla. Sift together next 5 ingredients and add to mixture. Stir in apple and nuts. Put in 9x13x2 inch pan. Bake at 350 degrees for 45 minutes; cool 15 minutes and ice. The batter is very stiff.
