DESSERT SURPRISE | |
3 egg whites 1 c. sugar 1/2 tsp. baking powder 1/2 tsp. vanilla 1 c. Ritz crackers, coarsely broken 3/4 c. chopped pecans Beat egg whites until soft peaks form. Slowly add sugar, baking powder and vanilla. Fold in crackers and pecans. Pour into greased 13 x 9 x 2 inch pan. Spread evenly on bottom of pan. Bake in preheated oven 375 degrees for 20-25 minutes. Cool. FILLING: 1 pkg. Dream Whip 1/2 c. cold milk 3 oz. pkg. Philadelphia cream cheese 1 c. Dole crushed pineapple, drained Combine milk with Dream Whip. Beat until soft peaks form. Add cream cheese; beat until stiff. Fold in pineapple (drained) and cover meringue. Chill for 2 hours. Yield 12 servings. Note: Have cream cheese at room temperature before adding to the Dream Whip. I find Cool Whip (approximately 12 ounces) works just as well. Just be sure not to add the 1/2 cup milk. Yum! Yum! Good... all calories removed! At Christmas time, I add red and green maraschino cherries to the top to add color. |
