BEER PANCAKES 
2 c. packaged biscuit mix
2 tbsp. sugar
1/2 tsp. cinnamon
Dash nutmeg
5 eggs, beaten
1/2 c. beer
2 tbsp. cooking oil

In large mixing bowl stir together packaged biscuit mix, sugar, cinnamon and nutmeg.

Stir together beaten eggs, beer and oil. Add dry ingredients, stirring until just moist. (Batter will be lumpy.) Add additional beer if thinner pancakes are desired.

Use 1/4 cup batter for each pancake. Cook on hot greased griddle for about 2 minutes or until golden. Serve with butter and maple syrup. Makes 10-12 (4 inch) pancakes.
