QUICK AND EASY STUFFED PEPPERS 
4 lg. green peppers
1 lb. ground beef
1 box beef Rice A Roni
Medium can tomato juice

Slice green peppers lengthwise (8 halves). Place in baking dish sprayed with Pam. Prepare Rice A roni per directions on box. Brown ground meat, drain and combine with Rice A Roni mixture.

Preheat oven to 350 degrees. Fill green pepper halves with ground meat/rice mixture. Pour tomato juice over top. Bake in preheated oven for 20 to 25 minutes or until green peppers are soft.
