SUNSHINE CARROTS 
7 or 8 med. carrots
2 pkg. Equal
1 tsp. cornstarch
1/4 tsp. ground ginger
1/4 c. orange juice
2 tbsp. Molly McButter

Bias-slice carrots crosswise about 1/2 inch thick. Place carrots in a saucepan containing 1 inch boiling water. Cover pan and cook until just tender, about 20 minutes. Drain.

Meanwhile, in microwavable bowl, combine Equal, cornstarch, ginger and Molly McButter. Add orange juice; cook in microwave 2-3 minutes, stirring at 1-minute intervals, until thickened and bubbly. Pour over hot carrots, tossing to coat evenly. Garnish with parsley and orange twist, if desired. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
