TOFU TAMALE PIE | |
1 med. onion, chopped 1 med. bell pepper, chopped 3 lg. cloves garlic, minced 3 tbsp. oil 2 lb. tofu, mashed well 2 cans (16 oz. each) tomatoes 1 can (4 1/2 oz.) chopped black olives 3/4 c. water 2 tbsp. chili powder 2 tbsp. George Washington broth 3/4 tsp. salt 3/4 tsp. garlic powder 1/2 tsp. cumin 1/4 tsp. pepper 1 c. cornmeal 8 oz. lowfat cheese, thinly sliced (tofu cheese ok) Saute in a 5 quart pan first 3 ingredients in 3 tablespoons oil, remove from heat. Stir in mashed tofu, tomatoes broken up and add the rest of ingredients; mix well. Bake in pyrex 9 1/2 x 13 x 2 inch pan at 350 degrees for 45 minutes. Remove from oven and top with low fat cheese, thinly sliced. Return to oven for 15 minutes. Serves 6-8. |
