HEAVENLY CHEESE MOLD 
1 (3 oz.) pkg. lemon gelatin
1 c. boiling water
3/4 c. pineapple juice
1 tsp. lemon juice
1 1/4 c. crushed pineapple, drained
1 c. shredded Cheddar cheese (sharp)
1 c. heavy whipped cream
1 c. chopped pecans
1 c. coconut

Dissolve gelatin in water; add juices. Chill until slightly thickened. Fold in crushed pineapple, cheese, pecans, coconut and whipped cream. Pour into 1 1/2 quart molds. Chill until firm.
