FRUITY MUFFINS 
1 c. quick or old fashioned oats, uncooked
1/2 c. all-purpose flour
1/2 c. whole wheat flour
1/2 c. firmly packed brown sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/4 c. shortening
1 egg white, slightly beaten
1/2 c. orange juice
1/2 c. skim milk
3/4 c. dried mixed fruit bits, chopped (divided use)
1/2 c. ripe banana, mashed
3/4 c. fruit preserves, warmed

Preheat oven to 400 degrees. Line 12 medium (about 2 1/2 inch) muffin cups with foil or paper liners.

Combine oats, all-purpose flour, whole wheat flour, brown sugar, baking powder, cinnamon and salt in large bowl. Cut in shortening using pastry blender (or 2 knives) until coarse crumbs form.

Add egg white, orange juice, skim milk, 1/2 cup fruit bits and banana. Stir until just blended. Fill muffin cups almost full.
