MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 (20 to 21 oz.) can Wilderness peach, blueberry, or sweet cherry filling
1/2 c. chopped nuts (optional)

Line cupcake pan with liners. Place a vanilla wafer in bottom of each liner. In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill the liners 3/4 full with cheese mixture. Bake in preheated 375 degree oven for 15 to 20 minutes or until set. Top with spoonfuls of fruit filling on each and one teaspoon of nuts. Chill. Serves 24.
