DIJON CHICKEN 
1/2 c. Dijon mustard
4 tbsp. shallows
1/2 tsp. crushed dried tarragon
8 tbsp. melted butter
Chicken pieces
Bread crumbs

Blend mustard, shallots, tarragon, and 2 tablespoons butter. Spread over chicken pieces and coat with crumbs. Arrange chicken pieces in baking dish. Drizzle remaining melted butter over chicken.

Bake in a 375 degree oven for about an hour. Olive oil is delicious used in place of butter.
