SWEET POTATO SOUFFLE 
4 lg. sweet potatoes (cooked until tender)
1 c. sugar
2 tsp. cinnamon
1 stick butter, melted
1/2 tsp. salt
2 eggs
1 tsp. vanilla
1/2 c. milk

Peel potatoes and beat until smooth. Add remaining ingredients. Beat all of this until smooth. Pour into large (9x13) flat dish.

TOPPING:

1 c. brown sugar
1/3 c. melted butter
1/3 c. flour
1 c. chopped pecans
1/2 c. coconut

Mix together and sprinkle on top of sweet potato mixture. Bake uncovered for 30 minutes at 350 degrees.
