CHICKEN AND CORN SALAD 
1 1/2 c. cooked or canned chicken (diced)
1 (8 oz.) can whole kernel corn (drained)
2 med. tomatoes (diced)
1 med. green pepper (diced)

DRESSING:

1/2 c. mayonnaise
1/2 tsp. salt
1 tsp. chili powder
1/4 tsp. pepper
1 tbsp. lemon juice
2 hard boiled eggs

Mix diced chicken, drained corn, tomatoes and green pepper with dressing. Garnish with 2 hard boiled eggs. Serves 4.
