BANANA WHEAT GERM MUFFINS 
1 c. sifted flour
1/4 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 to 3 lg. ripe, mashed bananas
1 egg
1/2 c. milk
1/4 c. melted butter
1/4 c. sugar
1 c. wheat germ
Favorite jam or jelly

Combine flour, soda, baking powder, and salt. Set aside. Beat together mashed bananas and egg. Add milk, butter, sugar, and wheat germ. Add flour mixture and stir well. Prepare muffin cups. Spoon small amount of batter in bottom of each muffin cup. Place about 1 teaspoon of jam or jelly on center of batter. Top with remaining batter. Bake at 425 degrees for about 20 minutes or until brown. Makes about 8 muffins.
