SIMPLE ONION RINGS
2 or 3 lg. onions (1015 are good to use) Pancake mix Shortening (Crisco) Mix pancake mix according to instructions on box. Slice the onion and dip in the pancake mix. Drop into hot shortening until brown. Drain on paper towels. Very good.

Fantastic recipe! We used the pancake mix and salt and pepper. Fried them at 365°F for 2-3 minutes. Turned out perfect!!
