PUMPKIN ROLL 
3 eggs, beaten 5 minutes
1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon

Beat above ingredients well; grease and flour jelly roll pan. Optional - can add nuts. Bake at 350 degrees for 15-20 minutes. Sprinkle paper towel with 10x sugar (2 towels attached).

After removing cake from oven, turn jelly roll pan upside down and let drop onto sugared towel and roll up. Let stand for 1/2 hour.

Unroll cake, fill and roll again. Refrigerate, slice later.

FILLING:

1 c. 10x sugar
8 oz. cream cheese
1/2 tsp. vanilla
4 tbsp. butter

Beat ingredients until smooth.
