CHICKEN AND RICE CASSEROLE 
2 c. chicken, cooked
1 c. celery, diced
2 tsp. onion, chopped
2/3 c. rice, uncooked
1 can cream of chicken soup
1/2 tsp. salt, dash of pepper
1 tbsp. lemon juice
1/4 c. mayonnaise
1/2 c. sour cream
1 can mushrooms, drained
3/4 c. milk

Combine all ingredients and put in greased 2-quart casserole. Top with 2 cups crushed potato chips or 1 cup shredded Cheddar cheese. Bake at 350 degrees for one hour.
