PINEAPPLE COLE SLAW 
1 sm. cabbage, chopped or shredded
1 carrot, shredded
1 can unsweetened crushed pineapple (in own juice)
2 tsp. lemon juice
Mayonnaise (amount to taste)

Drain pineapple, saving juice. Mix mayonnaise with just enough pineapple juice to make mixture pourable. Add lemon juice, stir well. Add cabbage and crushed pineapple and toss.

TIP: Add dressing just before serving to keep cabbage crisp.
