SQUASH RELISH 
1 lg. zucchini
2 c. onion
2 1/2 tsp. salt
1 c. cider vinegar
1 1/2 tbsp. nutmeg
1 1/2 tbsp. turmeric
2 c. sugar
1 1/2 tsp. dry mustard
1 tbsp. cornstarch
1 tbsp. celery seed
1/4 tbsp. pepper

Grind zucchini, salt, onion and set overnight. Drain and rinse in cold water. Drain again and then squeeze. Add remaining ingredients and cook 30 minutes. Boil then simmer. Add: 1 red Bell pepper 1/2 hot pepper

Cool and store in Mason jars or airtight container in refrigerator. Good to add as a relish for salads, hot dogs, etc.
