CORNISH HENS WITH CRANBERRY
DRESSING
 
4 Cornish hens

DRESSING:

1 c. chopped fresh cranberries
3 tbsp. sugar
4 slices raisin bread
1 tsp. grated orange peel
1/2 tsp. salt
2 tbsp. melted butter
2 tbsp. orange juice

Stuff hens with dressing. Cover with foil. Roast at 375 degrees for 30 minutes. Uncover roast 60 minutes at 375 degrees. Brush occasionally with mixture of 1/4 cup orange juice and 3 tablespoons melted butter.

NOTES: Serve on bed of dill.

Defrosted frozen Cornish hens seem to work better than fresh.

Serving half hen per person is probably enough and looks nicer.
