LEMON-CAKE DELIGHT 
1/4 c. flour
1 c. sugar
1/3 tsp. salt
3 egg yolks, well beaten
1/4 c. lemon juice
1 1/2 c. milk
1 tbsp. grated lemon rind
3 egg whites, stiffly beaten

Sift flour, sugar, and salt. Blend yolks, juice, milk, and rind. Combine; beat until smooth. Fold in egg whites.

Pour in greased 8 x 8 x 2 inch pan. Place in large pan with hot water. Bake at 325 degrees for 45 minutes. Serve warm or cold in squares. The cake makes its sauce as it baked. Serves 6.
