BANANA NUT CAKE 
2 1/2 c. cake flour
1 2/3 c. granulated sugar
1 1/4 tsp. double action baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2/3 c. shortening
2/3 c. buttermilk
1 1/4 c. really ripe bananas, mashed
2 eggs
2/3 c. chopped nuts (I like black walnuts)

Sift dry ingredients together into a bowl. Add shortening, 1/3 cup buttermilk and bananas. Beat vigorously for 2 minutes. Add remaining buttermilk and eggs. Beat, then add nuts. Pour batter into prepared pans (two 9 inch round or 13 x 9 inch). Bake at 350 degrees for 30-35 minutes for round pan or 45 minutes for oblong. Ice with Seafoam Frosting. This is a Wible Reunion favorite.
